Ingredients:
Crust:
1 1/2 cups graham cracker crumbs
1/4 cup melted butter
2 tablespoons Manuka honey

24 oz (680 g) cream cheese, softened
1 cup granulated sugar
1/2 cup Manuka honey
1 teaspoon vanilla extract
1 tablespoon culinary lavender, finely ground
3 large eggs
1/2 cup sour cream
1/2 cup heavy cream
Topping:
1/4 cup Manuka honey
1 tablespoon culinary lavender
Instructions:
Prepare the Crust:
Preheat your oven to 325°F (160°C).
In a medium bowl, combine the graham cracker crumbs, melted butter, and Manuka honey. Mix until the crumbs are evenly coated.
Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
Bake the crust for 10 minutes, then remove it from the oven and let it cool.
