This salad is packed with healthy fats, vibrant veggies, and the natural sweetness of Manuka honey—perfect for a nourishing meal!
Ingredients:
For the Salad:
- 4 cups fresh spinach leaves 
- 1 ripe avocado, sliced 
- 1/2 cup cherry tomatoes, halved 
- 1/4 red onion, thinly sliced 
- 1/4 cup feta cheese, crumbled 
- 1/4 cup walnuts, toasted 
- Optional: sliced cucumbers, radishes, or any of your favorite salad veggies 
For the Manuka Honey Vinaigrette:
- 2 tablespoons Manuka honey 
- 1 tablespoon Dijon mustard 
- 2 tablespoons apple cider vinegar 
- 1/4 cup extra virgin olive oil 
- Salt and pepper to taste 
Instructions:
- Prepare the Salad: - In a large salad bowl, combine the fresh spinach leaves, sliced avocado, cherry tomatoes, red onion, feta cheese, and toasted walnuts. 
- Toss gently to mix the ingredients evenly. 
 
- Make the Manuka Honey Vinaigrette: - In a small bowl or jar, whisk together the Manuka honey, Dijon mustard, and apple cider vinegar until smooth. 
- Gradually add the olive oil while continuing to whisk, until the vinaigrette is well-emulsified. 
- Season with salt and pepper to taste. 
 
- Dress the Salad: - Drizzle the Manuka honey vinaigrette over the salad just before serving. 
- Toss the salad lightly to coat the ingredients with the dressing.
