Ingredients (makes ~12–16 small jellies):

  • 1 cup pear juice (or apple juice if they prefer)

  • 1 chamomile tea bag (or 1 tsp dried chamomile flowers)

  • 1 tbsp Manuka honey (UMF 10+ or higher)

  • 2 tbsp unflavored gelatin powder (for soft jellies; use 3 tbsp for firmer ones)

  • Optional: finely grated apple (1–2 tbsp) for texture

  • Optional: 1/4 tsp vanilla extract or a pinch of cinnamon

Instructions:

  1. Make the chamomile infusion
    Heat pear juice until just steaming. Add chamomile and steep for 5–10 minutes. Remove the tea bag or strain the flowers.

  2. Cool slightly and add Manuka honey
    Let the juice cool below 40°C (104°F), then stir in the Manuka honey so its goodness isn’t damaged by heat.

  3. Bloom the gelatin
    In a small bowl, sprinkle the gelatin over 2 tbsp of cold water and let it sit for 5 minutes.

  4. Combine and melt
    Gently warm the honey-infused juice again (don’t boil), then stir in the bloomed gelatin until completely dissolved. Mix in grated apple or vanilla if using.

  5. Pour into molds
    Use silicone molds (fun shapes like stars or bears!) or pour into a shallow tray.

  6. Chill
    Refrigerate for at least 1 hour, or until set. Cut into cubes if not using molds.

  7. Store
    Keep in an airtight container in the fridge for up to 5 days.
