Ingredients (Makes ~8 small scones):
- 2 cups all-purpose flour 
- 2 ½ tsp baking powder 
- ½ tsp sea salt 
- 50g cold unsalted butter, cubed 
- ½ cup crumbled blue cheese (gorgonzola or roquefort) 
- ½ cup chopped toasted walnuts 
- ¾ cup milk (or buttermilk) 
- 1 ½ tbsp Manuka honey (plus extra for drizzling) 
Instructions:
- Preheat Oven: - Preheat to 200°C (390°F). Line a baking tray with parchment paper. 
 
- Mix Dry Ingredients: - In a bowl, combine flour, baking powder, and salt. 
 
- Cut in Butter: - Add cold butter cubes and rub in with fingers or use a pastry cutter until the mixture resembles coarse crumbs. 
 
- Add Fillings: - Fold in crumbled blue cheese and chopped walnuts. 
 
- Mix Wet Ingredients: - In a small bowl, whisk together milk and Manuka honey until well combined. 
 
- Combine & Shape: - Gently mix wet into dry just until a dough forms (don’t overmix). 
- Turn out onto a floured surface, pat into a 2–3 cm thick circle, and cut into triangles or rounds. 
 
- Bake: - Place on baking tray and bake for 15–18 minutes, or until golden and firm. 
 
- Finish: - While still warm, drizzle a touch more Manuka honey over the top for contrast.
