Rich, crumbly, and complex — these scones pair bold blue cheese with earthy walnuts and the subtle sweetness of Manuka honey. Ideal as a snack, appetizer, or served with a glass of wine.

Ingredients (Makes ~8 small scones):

  • 2 cups all-purpose flour

  • 2 ½ tsp baking powder

  • ½ tsp sea salt

  • 50g cold unsalted butter, cubed

  • ½ cup crumbled blue cheese (gorgonzola or roquefort)

  • ½ cup chopped toasted walnuts

  • ¾ cup milk (or buttermilk)

  • 1 ½ tbsp Manuka honey (plus extra for drizzling)

Instructions:

  1. Preheat Oven:

    • Preheat to 200°C (390°F). Line a baking tray with parchment paper.

  2. Mix Dry Ingredients:

    • In a bowl, combine flour, baking powder, and salt.

  3. Cut in Butter:

    • Add cold butter cubes and rub in with fingers or use a pastry cutter until the mixture resembles coarse crumbs.

  4. Add Fillings:

    • Fold in crumbled blue cheese and chopped walnuts.

  5. Mix Wet Ingredients:

    • In a small bowl, whisk together milk and Manuka honey until well combined.

  6. Combine & Shape:

    • Gently mix wet into dry just until a dough forms (don’t overmix).

    • Turn out onto a floured surface, pat into a 2–3 cm thick circle, and cut into triangles or rounds.

  7. Bake:

    • Place on baking tray and bake for 15–18 minutes, or until golden and firm.

  8. Finish:

    • While still warm, drizzle a touch more Manuka honey over the top for contrast.

Why It’s Special:

  • The sharp saltiness of blue cheese + earthy walnuts + caramel floral notes from Manuka honey = sophisticated flavor harmony.

  • Unexpected but addictive — especially for cheese lovers or as a wine pairing.

  • Makes a stunning brunch or gourmet picnic item.
